Join Kelly as she whips up three of her favorite Disney inspired treats (Dole Whips, Churros & Rice Krispie treats). If you want to “cook” along with her for any (or all) of the treats, make sure to have the ingredients for your choice of treats on hand. Otherwise, you are welcome to just watch & learn!
ps. All three treats are deceivingly simple & super yummy.
Dole Whip Recipe
Ingredients
1 cup pineapple juice
1 cup frozen pineapple chunks
1 banana peeled & frozen
2 & 1/2 teaspoons of powdered sugar
1/4 – 1/2 cup unsweetened coconut milk beverage
Directions
Combine all ingredients in a blender or food processor. Cover; blend until smooth, about 2-3 minutes. Garnish with fresh pineapple. Serve immediately.
Churro Bites Recipe
Ingredients
1 cup water
8 tablespoons butter
¼ teaspoon salt
¾ teaspoon ground cinnamon divided
1 ¼ cups all-purpose flour
3 eggs
1 ½ cups vegetable or canola oil
½ cup sugar
piping bag fitted with large star tip, or large ziplock bag
Directions
Combine water, butter, salt, and ¼ teaspoon cinnamon in 1 ½-quart saucepan over medium heat. Bring pot to rolling boil. Reduce heat to low.
Add flour and stir vigorously until mix forms a ball.
Remove from heat and let rest for 5-7 min.
Add eggs, one at a time, and stir until combined. Set aside.
Heat oil in medium skillet or 1-quart saucepan over medium-high heat or until temperature reaches 350˚F.
Spoon dough into piping bag fitted with large star tip.
Pipe 1-inch strip of dough over saucepan, cut with knife, and drop into hot oil. Repeat until churro bites fill saucepan with room to fry.
Fry churro bites until golden brown. Remove with slotted spoon or mesh spider strainer.
Drain churro bites on paper towel.
Mix sugar and ½ teaspoon cinnamon in medium bowl. Toss in churro bites until coated.
Place on serving plate and serve with favorite dipping sauce.
Fluffernutter Churro Recipe
Ingredients
homemade churro bites or frozen churros
1/2 cup creamy peanut butter
1/2 cup marshmallow cream
1/4 cup mini chocolate chips
Directions
Make churros & immediately sprinkle with a couple teaspoons cinnamon sugar mixture.
Place churros onto a serving plate.
Warm peanut butter in a heat proof bowl for about 30-45 seconds in the Microwave. Stir until smooth then transfer to a ziplock bag. Snip corner and use as a little piping bag to drizzle peanut butter over churros.
Warm marshmallow cream in a heat proof bowl for about 30 seconds in the Microwave. Transfer to a ziplock bag, snip a corner and use as a little piping bag to drizzle over churros. Top with mini chocolate chips and serve warm.
Rice Krispie Treats Recipe
Ingredients
8 tablespoons butter (cut into 1 TBSP tabs)
1 package (10 oz) marshmallows
1/4 tsp vanilla
6 cups rice Krispies cereal
Optional: 2-3 Tablespoons colorful sprinkles
10 ounce bag white chocolate melts (1 1/2 cups)
10 ounce bag mini M&M’s
Directions
Place marshmallows, butter and vanilla in a large microwave safe bowl.
Microwave on HIGH for 1 minute at a time, stirring in between minutes, until mixture is melted and smooth.
Slowly mix in rice cereal until well coated.
(Note: this is also the time to add in colorful sprinkles if you are doing so.)
Prepare a 13 x 9 baking dish with parchment paper, and spread mixture. Because these are uber soft and chewy treats, you need to let them cool for at least 45-60 minutes.
Cut into fun shapes or about 3inch by 3inch squares to make about 10 servings. Feel free to dip in melted chocolate for even more fun!
